Oh baby it's cold outside! Warm up your winter evenings with this comforting and hearty Eggplant Parmesan, kissed by the authentic flavors of MarRosa's Old World Cuisine Marinara Sauce! 🍆🔥🧀 

Ingredients:

1 large eggplant, sliced into 1/2-inch rounds
2 cups Italian breadcrumbs
3 eggs, beaten
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 jar MarRosa's Old World Cuisine Marinara Sauce
Olive oil for frying
Salt and pepper to taste
Fresh basil for garnish
Instructions:

Preheat your oven to 375°F (190°C).

Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to draw out excess moisture. Pat them dry with a paper towel.

In one bowl, place the beaten eggs. In another bowl, mix the Italian breadcrumbs with grated Parmesan cheese.

Dip each eggplant slice into the beaten eggs and then coat with the breadcrumb mixture.

Heat olive oil in a skillet over medium heat. Fry the breaded eggplant slices until golden brown on both sides. Place them on a paper towel to drain excess oil.

In a baking dish, spread a thin layer of MarRosa's Old World Cuisine Marinara Sauce.

Arrange a layer of fried eggplant slices on top of the sauce. Sprinkle mozzarella cheese over the eggplant.

Repeat the layers, finishing with a generous layer of marinara sauce and mozzarella on top.

Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.

Garnish with fresh basil and let it cool slightly before serving.
